Anti-Oxidants Top 20

The USDA has developed a scale for antioxidant food content.

Known as the ORAC Scale. (Oxygen Radical Absorbance Capacity).

I was surprised to see Artichokes rate so high.

Try to avoid canned foods. It’s easy enough to par-boil dried beans or soak them for several hours.

Anti-oxidants repair cellular damage from smoking, pollution, poisons, fried foods and as a by-product of normal metabolism.
